Chacoli, or txakoli as it is called in the Basque language, is a white wine produced mainly in the Basque Country. It is produced using green grapes and it has an alcohol level between 10,5º and 15º. It should be served fresh-cold and, if possible, pairing it with salted anchovies or tuna with olive oil.
Getaria is the biggest production area in the whole of the Basque Country and that's the reason behind the Spanish National Certificate of Origin gained in 1990, Getariako Txakolina. At the beginning, Getaria, Zarauz and Aya were the three villages within this certificate but later on it was extended to the whole province of Guipuzcoa.
There are two local varieties, Hondarribi Zuri, representing 95% of the vineyards, and Hondarribi Beltza. Both of them create the Getariako Txakolina.
